Q: How did you get involved in this business?
A: I worked for a company out of college that I loved for 11 years. The owners of that company had the good fortune to sell. They sold to a big corporation and as things do, they eventually changed from a wonderful family-owned business to corporate ways. I had always wanted to try a kraut burger restaurant with my family recipes. So as I became more unhappy with the corporate life, my wonderful husband said "let's go for it." That began our process of opening Lauer-Krauts. Lauer is my maiden name. My dad makes homemade sauerkraut and has always lovingly called it Lauer-Kraut. I am pretty proud to be a Lauer and the name just lent itself perfectly to our little restaurant. Although the kraut is from my dad, all our food recipes come my mom's side of our family. My mom is a wonderful cook. She learned to cook from her mom and now I am learning from my mom and all my aunts. Though it’s difficult to refer to Brighton restaurant Lauer Krauts as either a diner, a drive-in, or a dive, there’s no doubt it is unique — and popular.
And that’s why the restaurant was chosen to be featured in an upcoming episode of Food Network’s top-rated show, “Diners, Drive-ins and Dives.”
The local eatery found on South Sixth Avenue, opened in August of 2006 by Brighton native Robin Trujillo. Both Trujillo’s mother and father are from families that are Germans from Russia. It was always Trujillo’s dream to open a restaurant that gave homage to a popular family meal item: the krautburger.
